What is the difference between Edge AI and cloud processing?

Cloud processing sends data to a remote server with large compute, at the cost of latency and a dependence on connectivity. Edge AI processes on the device itself: sub-second latency, operation without internet, and better privacy because data never leaves the device — in exchange for limited compute, memory and power, which forces smaller optimised models. Robots, self-driving cars and smart cameras run at the edge because latency there is not an annoyance but a hazard.
