The protection is built before the problem, not after: tie payments to delivered milestones rather than to time, require code to be pushed to a repository you own after each stage, and keep a copy of all documentation and access credentials. Then if communication stops, your loss is one payment at most, and another developer can continue from the last point instead of starting over.
